The emerging, next generation food system will profoundly change what, why, where and when we eat. And when food is no longer just calculated as what is on the plate but the effects of what we eat, the future promises to unlock massive amounts of value for a whole range of new players. This means a fundamental shift towards innovation and change-oriented new players as well as to new centers for development. While no one would argue that the great food cultures of the world are under an acute culinary threat, much of the future value created through food will end up in new hands. The French and Italians can keep their dishes, as long as the Swedes lay their hands on the next gen food system.
